I only started on January 2nd, but I can tell you what will be the hardest part for me, and it won't be the actual carbs, per se. It will be my fear of fat intake.
Almost everything I am eating except for veggies is causing me fear.
With 4 days done, I just don't feel good mentally when I eat beef, pork, eggs, cheese......
but I have had a heart attack from clogged arteries, so maybe you can understand my fears.... BTW, I just stocked up on fish today... catfish, tilapia.... And I bought a 10 pound bag of boneless, skinless chicken breasts at Costco, as well.
But here is something that has REALLY got me concerned.... I have been faithful to the plan AND have not eaten over 2500 calories in any of those 4 days - and usually almost 2000 - and I have GAINED 4 pounds!!!!!
What the heck is that about? My clothes do feel looser, though.
