"Breaded" Chicken - better than the real thing! | | I made this tonight and my word it was tasty. It was another "accident" discovery. I was attempting mozzarella sticks, but they came out bad.... To make the breading: Pork Rinds - put in a ziplock bag and crush finely first (use a rolling pin or a soup can) Parmesan Cheese Garlic Powder Onion Powder Pepper (NO SALT) A small amount Cayenne Pepper Dip Chicken in an egg (that's been beaten first) and then toss to coat in the "breading" mixture. Bake at 400 degrees 8-11 min a side. (I had to check mine a couple times) Fan-friggin-tastic. Me, my dear fiance who is also doing Atkins with me, and my carb-eating friend all agreed it was the best chicken we've ever had. I was shocked when I realized I hadn't put any salt in it, and it tasted phenomenal. Please try it and let me know how yours turns out!!!
