Re: Saturated Fat and Diabetes | | My son has Type 1 and he's found that ANY large amount of fat (saturated or not), a large portion of protein (for ex an 8 oz steak), or a combination of fat/protein (for ex a low carb pizza made of cheese, eggs and meats) will cause a rise in his blood sugar readings. Eating these has not caused him to stall but he does have to take more insulin to cover those foods. Even though pure fat and protein technically have 0 carbs, in the person with diabetes, these foods will normally cause BS to rise.
