Default flax seeds - my new best friend! :)

Ok, so i posted a while back about the flax seed bun that I made for sandwhiches - which is FABULOUS in my opinion...

and i've been trying to figure out what ELSE i can use flax seeds for...

I found a quick and easy recipe for flax seed cereal/"pudding"...and it just absolutely hit the spot!!!!

i used to be a HUGE oatmeal fan (which - as far as the higher carbs go, true oatmeal is one of the beset for you) but since I obviously can't HAVE oatmeal right now, I did this:

2 tbsp flax ground flax seed meal
2 tbsp water
1 egg
sugar substitute to taste (i bought some xylitol today, but splenda would work)
"mixins" (i used cinnamon)

I mixed the flax with the water, egg & xylitol - along with about 1/2 tsp of sugar free davinci syrup (kaluah is what i've got)...

i microwaved for 45 seconds, took out, re-mixed and put the cinnamon in - re-microwaved for about 15 more seconds


OHMYGOD - do i LOVE it!!!!!

of course, the problem is, until i get to the nuts rung I can only have 2 tbsp of flax seeds per day - but i absolutely LOVE them!!!!!

plus it REALLY helps me get my fiber in!

the other mixins could be:
(if you're on the nuts rung) - 1 or 2 tbsp natural peanut butter or other nut butters
(if you're on the berries rung) - fresh or frozen berries
Unsweetened coconut
(again, nuts rung) chopped nuts

i can't WAIT til i'm on the nuts rung - as i LOVE my natural peanut butter - and 1 tbsp of the kind i buy would only be 2 g carbs!!!

but oooooh was it good!
