Re: Need ideas for between meal snacks and mid-meals | | Try the one minute breakfast muffins and use one as a snack. You can make them savory or sweet and it is a change of pace from meat and cheese. I like to get a plate with some olives, a tiny bit of cheese, some veggie sticks, and smoked salmon. Kind of an antipasto plate. Other things to use are roasted peppers, artichoke hearts, grilled eggplant and zucchini slices with a little olive oil, or a deviled egg. Maybe a marinated (by me) mushroom or two. It adds to my veggies and is all induction friendly. Any combo of these is good. Usually I eat a snack plate early and then a much smaller dinner later.
