I think I may have made the breading too thick because its not as crispy as I prefer but its still amazing! I want to coat little chicken nuggets in this and fry them and see what happens. I'd be happy eating this ever day!
p.s. I have frozen chicken breasts I use for this, and I soak them in water and Tony Chachere's cajun seasoning to thaw it, then i let it keep soaking for hours before I bread and cook them. It makes the chicken unbelievably tender.
