Everlosing, I won't say it's a gourmet treat. You could probably make it taste a lot more Italian by using tomato sauce seasoned with basil, garlic and so forth.
But for a fast, easy, different lunch, it was great.
Carole, I added more flax seed which took away the too-eggy, wet texture of the original recipe that I used. It did make a difference.
I usually remember to drink all my water, but some days I'm a little slack. So the challenge will be great for me!
