4 slices cheddar cheese | Doesn't look bad.  You are probably around 1500-1600 calories or so, aren't you? I don't know what's your weight, but depending on that you might want to increase this number. You can do it by adding more fat to your current meals (butter, oil).
If one slice of cheddar has 1 oz, then you go a little over your cheese allotment. The maximum is 3-4 oz per day.
You should be drinking at least eight 8-oz glasses of water per day. The more you weigh, the more water you need though. As a rule of thumb, you need 64 oz, plus another 8 oz for every 25 lbs you have to lose.
