About the bacon - I am fortunate to have a huge Whole Foods Market in town (love that place!), and this is what I found: It was impossible to find a bacon that was
both nitrite/nitrate-free a
nd sugar-free. Every single brand that was nitrite/nitrate-free had some sort of sugar in it... usually listed as evaporated cane juice or turbonado (spelling?) sugar. It's almost like it has to have one (nitrates) or the other (sugar), and we have to make a choice. I try not to eat a lot of bacon, but when I do, I have been choosing sugar-free over nitrite/nitrate-free. Mostly because it's cheaper and much easier to find. If I ate bacon more often, maybe I would be more concerned over the nitrates, but since I don't, I'm avoiding the sugar part.
