I'm not sure how you cook the shrimp or any of the other foods for that matter... but using fat in cooking will increase your calories/fat intake without you having to eat a lot of food.
Varying your vegetables and cooking some with butter or some other form of fat will help too. You might also consider adding some olives or 1/2 avocado to your menus.
