That's because people panic and they are wrong. A plateau, as defined is
DANDR (page 182), requires "no weight loss or loss of inches for at least four weeks."

That's right. Heavy cream does not have zero carbs. The manufacturer is allowed to write 0 on the label of any product that has a carbohydrate content of less than 1 g per serving.
