It's basically made the way you make homemade Jell-O (Jelly in the UK) with 2 packs Knox gelatin and two packs of unsweetened (no sweetener at all) pink lemonade flavor Kool-Aid drink mix and 3 cups water, total, and 12 oz. softened cream cheese, 1 cup Splenda or equivalent of liquid Splenda (that's what I use, so no carbs). Make up the gelatin mixture and hold back about 1 cup at room temp. Mix the rest in with the cream cheese and whisk until well blended. Pour into a 10-inch pie dish and refrigerate until firm on top. Then pour the rest of the gelatin mixture over the top and refrigerate for several hours. The cream cheese layer is light pastel pink and the gelatin on the top is a much deeper pink--very pretty. This is induction friendly. Don't forget: this is a diet; so when you make it it would be unseemly to actually like it so much that you lick the bowl. |
