Hot chicken salad is a "Southern" states dish. When I lived in the NJ-NY area, my co-workers thought I was nuts for eating warmed chicken salad or turkey salad. But it's no different that a tuna melt, imo.
Anyhow, it's good stuffed into tomatoes, red bell peppers and zucchini. Or just put into a buttered ramekin and shoved into the oven or microwave with a topping of cheese. When I cook it that way, I add extra veg like cooked chopped broccoli, asparagus or even spinach (layer it on the bottom of the dish and put the chicken salad on top---totally casserole-comfort food!) |
