You really should eat combinations of fat, protein and carb during your meals. Try to avoid loading your carbs in one meal-----you don't want to spike your insulin. Besides when you eat carbs with fat and protein it slows their digestion making an insulin spike less likely.

As for how much you are eating.....is the amount you are eating satisfying your hunger? If so, then you are most likely eating an appropriate amount. Your body won't let you starve. If you feed your appetite, you'll notice on some days or some meals you'll eat more than others. That's totally okay. Because that's what you did when you were a baby----eat only that amount you need for your energy requirements.
