I love to cook so I get creative with what things that I can have on Atkins. I find that I need variety in my meals otherwise I get bored with the same ol' same ol'.
Try an open face eggplant omelet with cheese or jalapeņos stuffed with cream cheese and wrapped in bacon. I buy a stuffed salmon from WalMart fish market that is pretty good, but I have only been able to find it at one location. I make my own tarter sauce so I kick it up a few notches. I loveeeee cookbooks so i have invested in a few low carb cookbooks.
I know that it is hard to eat the way I am suppose to at times, especially with a teenage daughter who does not need to watch her weight...but I can remember I was like that at her age also...those were the skinny days. I also do not buy much of anything white to fix in my house, but I do fix my daughter her favorites, I just have to restrain myself.
