Many of the foods you listed do have carbs: lettuce, eggs, cucumber, bacon (maybe), cheese, mushrooms. I believe you don't have the book, but here is the list of foods acceptable during Induction:

There are 55 vegetables on the list, so there is no reason to limit yourself to lettuce, cucumbers and mushrooms. Then you have many meats to choose from -- poultry, fish, shellfish, red meat -- so there are tastier options than bacon and canned tuna, imo. There are also many fats, avocados, olives, cream, etc.

You will not be starving. Don't forget that Atkins is a high fat diet, with approximately 65% of your total calories coming from fat during the Induction phase. The fiber from vegetables will fill you up during meals, while the fat will keep you satisfied between meals. Also, if you are hungry or six hours have passed since your last meal, then you should eat.
You might be hungrier during the first few days, but after you get into ketosis, your appetite will be reduced.
