Diced ham can either be thick cut ham which you can dice, or walmart has already chopped ham in a package in small or large chunks. It doesn't mean lunch meat, but i guess you could if you wanted to, I have! As for heavy cream, I use heavy whipping cream, don't know if it's the same thing, but that's always worked for me! It's next to the milk at the grocery.
