I think yes you will be fine if you did that.

In the end if we follow this WOE (way of eating) correctly we will end up eating a lot of veggies every day and at most meals. Low glycemic vegetables that are also nutrition rich are going to be a main staple in our diet. It is because in the end if everyone filled at least half their plates with these vegetables all their life - instead of junk and starches we would not have gotten fat in the first place. Now, on Atkins, we are learning to give vegetables back their rightful place in our diet. So do not skimp!!!! It is a new habit for a healthy life.
