If you have your own ice cream maker you can make your own low-carb ice cream in any flavor you want. I like to an ice cream with thick coconut milk and stevia and some unsweetened coconut flakes. That's all I add, and it comes out delicious.
edit: Maybe you could put your mixture into a pop-sickle mold with sticks? that might work out well if you don't have an ice cream maker.
