Atkins wrote that he doesn't recommend going more than 6 hours without food during your waking hours. 2 egg whites doesnt' sound like a very healthy breakfast to me (there's no fat in egg whites, either). How about making scrambled eggs? Could you eat the yolk that way? or maybe an omelet. And are you sure you're drinking enough water? And it doesn't look like you're coming close to the 3 cups of veggies that you're supposed to be eating every day.
