Default Roasted Pepper and Feta Chicken

Roasted Pepper and Feta Chicken


1 chicken breast (skin on)
1 tbsp crumbled feta
1/4 red pepper-roasted

parmesan cheese
egg
(for breading)

enough oil to panfry



Slice a pocket in the side of the chicken.
stuff in the pepper.
stuff the feta under the skin. pinch the skin down to try and "seal" it
coat the chicken in parmesan, then egg, then parmesan again. let sit about 5 minutes to set the breading (or else it will all just fall off when you fry it)

heat oil in pan, when hot, place the chicken in the pan skin side down first. when golden brown, flip over and cook rest of the way. (its important to get the oil hot first or the chicken will just stick to the pan and absorb the oil)


creamy garlic sauce
i whipped up this yummy sauce to go with the chicken just to ooomph up the flavor a bit. the chicken is really yummy without it though.

1 tbsp cream cheese
1/2 tbsp heavy cream
1 clove garlic-minced
pepper to taste
chopped parsley for garnish


saute garlic, add cream cheese and cream. combine until a nice consistency. add parsley and pepper. drizzle over top chicken
