Default Home Made Sugar free JAM!

Ok, so I've been on a mission to find a "clean" / sugar free jam. Really isn't one out there - commercial jams & jellies have so much sugar in them - and then the splenda made ones have too many ingredients I "can't pronounce"...I'm trying to eat WHOLE foods and NOT chemicals.

SO. I bought some No-Sugar Needed SURE JELL (found in the jello aisle) - and made the version/recipe included for th "no-sugar needed" recipe.
It calls for splenda but I used erythritol instead.

I don't remember the exact recipe - but it's basically:

1.5 pints of strawberries (it's what i had on hand, lol - plus i didn't want a LOT of jam).

1/2 the packet of sure jell

1/4 cup of erythritol

basically the recipe in the box calls for 3 pints, the full packet and 1/2 cup of splenda so I plit it all in half.

I mashed the strawberries (actually pulsed them quickly in food processer)
put them in pot with 1/2 cup water. brought to boil stiring
stirred in sure jell. brought to boil, stiring
took off burner and stired in erythritol

let stand in plastic containers for 24 hours in pantry.

had some today on a flax seed muffin and OMG it was FABULOUS!!!!!

just wanted to share! if you want to try making your own, make sure to get the "NO SUGAR NEEDED" sure jell. (got mine at walmart).
