I have lost 12 pounds in the first 10 days on Atkins, very excited...
My Blood Lipids before starting Atkins are the following

Total = 213
Tri = 231
LDL = 139
HDL = 31
VLDL = 46
Here's something from the folks at Weston A. Price: The Importance of Saturated Fats for Biological Functions

Also from Mary Enig, PhD's book Know Your FAts, lard (pork fat) is 40% saturated and 50% monounsaturated. So by definition, lard is an unsaturated fat.
