Remove.Then I saute a bunch of onion and celery in a pot, add the chicken and about a quart of broth (I use College Inn, Swanson). Toss in chopped zucchini or yellow squash, a can of chopped tomatoes, a heavy dose of parsley and a good shake of celery seed and pepper (don't need salt with the broth). I also add green beans, cabbage, whatever other veggies might work. Simmer for an hour and you are done. You can sprinkle a little parmesan over it for a little extra flavor.
