I recently decided to make my own tomato sauce, and was very impressed with the results. You can try it yourself, it doesn't take a whole lot of work.

Start with a food processor full of plum tomatoes, puree down, and add a couple cloves of chopped garlic, and a package of mushrooms (the mushrooms add depth to the sauce, and when pureed in will increase bulk without the extra carb content of more tomatoes).

In a seperate pan sautee some garlic and onions in EVOO, and when the onions just start to brown add in the mixture from the food processor and start to cook down for about 45 minutes over medium heat.

Towards the end of that time season to taste with salt and pepper, and add whatever herbs you like (I added rosemary (Fresh is best), basil, parsely, and oregano, came out quite well).

This freezes well in ziploc baggies, so make up one batch and you are set for a while.
