Some people count calories because they are used to doing that and they use that method to keep track of the amount of food they eat.
Other people don't count calories and use standard serving sizes (and their ability to feel satiety) as their means of controlling food intake.
Dr. Atkins hoped that the natural appetite suppression of his diet would help us to re-learn our natural hunger-satiety cues.
Just remember what Dr. Atkins wrote in DANDR 2002 Chapter 11

Although there is no need to count calories, they do matter. Gaining weight results from taking in more calories than you expend through exercise, thermogenesis (the body's own heat products) and other metabolic functions. Research has shown that on a controlled carbohydrate program, more alories are burned than in a low-fat/high carb diet, so there is a certain metabolic advantage to the controlled carb approach. But understand that this does not give you the license to gorge.

The last sentence is particularly important: don't gorge. Don't eat 16 ounce of steak because you
can eat thatamount. Don't eat 1/2 cups of salad dressing because you
can eat that amount. Especially with the added fats, stick to the serving sizes listed on the bottles because it takes very alittle added fat to make your diet "high fat" (ie: over 50% total calories from fat).
