Since I had a few (

carbs left over and it's my second day of induction I was looking for something to munch on tonight. I wanted something not too sweet and this "cookie" sounded intriguing, besides I could use the flax meal. Well I cooked one up and it was wonderful!! I added a little whipped cream on top. I got to thinking this would make a great pie crust - light and crispy! Do these store well. I was thinking of making some up and having them as "toast" with my eggs in the morning?
