my soup from yesterday -- it was yummie - well, the second bowl was delicious, the 1st bowl had a lot to be desired!

2nd bowl dinner - with pork salad in lettuce leaves (pork salad - cut up pork roast, mayo and pickles)

I don't know why it tastes better the next day but it usually does. I really wish I would known the flavor was going to be something I liked enough to want more than 2 bowls - I would have added more water to the roast when it was in the oven. Next time I will be smarter.

Yesterday I ran mom to 2 doctor appointments, today the hubs had an eye doctor appointment (took 3 hours) then we went and got him new glasses. His eyes have changed significantly so the change was extremely warranted. He's not ready for any type of surgery to improve his eyesight but at least they can continue to give him stronger prescriptions until it gets to that point.

Needless to say I am exhausted from the past two days. I took water to drink so I stayed hydrated and took a baggie of veggies to keep from getting so hungry. My blood sugar was low this morning (90) and at 5:30 tonight it was 119 -- it normally goes down during the day but I think not eating at the same time and being stressed has something to do with it.

Ok, Sadie just came and told me her harness is by the door and she really wants to go for a walk, so I'm going to take her.

I've noticed another change in my body recently -- I am cold a lot of the time....I don't mean chilled to the bone and not because it's cold outdoors, I don't know if I can explain it in a real good way, but I have a chill that seems to just hang at the outline (aura) of my body. I have been one who could sit in a deep freeze and perspire but not now. I'm excited with this change because I've been going through the change since I was 31, they found a tumor in my womb and had a partial hysteroctomy - I was almost through it (9 years 6 months later) when they found a tumor on one of my tubes and ovaries so another surgery and back through hot flashes, mood swings and wanting to just jump off a cliff with depression. My life is starting to feel more normal now - I can't wait to see what other changes come with more weight loss.

It's Thursday and I'm very happy today. We got our Federal tax return last week and decided to put some of it into the house. I called the gas company and next Wednesday they are coming to put a new gas line in because I bought a gas stove and matching overhead microwave. The stove will be installed next Wednesday and the microwave will be here the following Thursday. Whoo Hooo!!!!! I can't wait. We are keeping the old electric stove, we'll put it in the basement in the unfinished area so we can bake in the summer and for canning also! It will be nice to have an extra stove again to make canning cooler and cleaner.

I also want to find the brick and stone for the landscaping also, just haven't taken the time to really start looking - the stove was more important!

I made my version of shrimp scampi -- I melted butter in a skillet with a clove of garlic and put the shrimp in until it was done (just a couple minutes) - it was really good but not really a lot of garlic taste, so maybe next time I'll have to add another clove of garlic. It's amazing that I use garlic cloves and Louisiana Hot Sauce on a daily basis now....I never would have used either of them before Atkins! My tastbuds are so much different it's wonderful and I am enjoying the new flavors in my food. I found vegetable seasoning made by Tone's that has no salt but it has dill - I put that on just about all the veggies I cook and really like the bright taste of the dill in the food. I found a shaker of Accent in my spices -- I threw that out -- NO MSG for me thank you!

On the news this evening they reported the state is trying to ban junk food in the schools in Missouri -- I was appauled when Greg's daughter was in school here and she told us about the row of machines with chips, candy, ice cream, soda outside the lunchroom and how kids bought the stuff and ate it while in line waiting to get their lunches. I also started making her lunches because what they served here was not healthy. The last day we looked at the lunch menu that became the turning point they were serving, macaroni & cheese, grilled cheese on texas toast, peas, and chips....do you see the problem? There were no vegetables, no salad, nothing but starch. Not nutritious by any means so we started making her lunch and she ate that way for awhile. edit to add: peas ARE a vegetable but a starchy vegetable and with all the other starch on the menu it didn't seem like a good choice for the vegetable.

Ok - I need to go to bed, I need sleep before I fall asleep at the keyboard!

I think you'll love the gas stove, Carole.

I really hate when I visit my family and cook on their electric stoves. It's so much easier to adjust the heat to just the right degree with gas.

Also, many years ago we were in a 5 day power outage in the middle of winter in an all-electric house. No heat and no way to cook or make hot drinks. It was miserable. I vowed then that I would NEVER be without a gas stove again!!!

I also love the idea of having a separate stove in the basement for canning!

I've always enjoyed cooking and coming up with new recipes. A lot of times I will go into the kitchen and just start playing, not really knowing what I'm going to do. It just kind of evolves. DH loves those meals best of all!

Keeping Atkins interesting takes a lot of creativity and combinations you wouldn't have experimented with before. I think it is just plain fun!

Oh man... with fast foods and school lunches, kids don't stand a chance unless the parents are very proactive, do they!

We were lucky and missed the bad storm that came through last night....it hit Arkansas very hard and came into the bottom portion of the state. We had high winds, thunder, lightening and hard rain but nothing was damaged. Oklahoma is having wildfires - I really feel bad for anyone going through that.

It is suppose to rain and storm all day again today - the sky has that funny murky look to it which usually means something is coming - but we aren't under any watches other than thunderstorms.

This morning I only cooked 1 egg for breakfast -- I've been eating 2 scrambled eggs since the beginning but the past couple days I haven't finished them so I decided not to cook the 2nd egg and see if I would want more. I had 2 thin slices of ham lunchmeat but instead of cutting them and putting it in my eggs I rolled them up and dunked them into the egg (because I made my egg "over easy"). Half way through the second piece of lunchmeat I was full, so Sadie got the remainder of it (she was thankful and licked her chops!) Honestly until this past week I haven't had less of an appetite since I started - or I was eating full portions thinking I needed the whole thing. But maybe this is another bridge I'm crossing in my weight loss.

It's amazing how much better I feel physically and mentally. I am more alert during the day and sleep much more sound during the night.

I had a snack night before last just before going to bed and woke up to a reading of 113 but it was back down last night to 98 - then this morning it was 94. So, is the fact my blood sugar readings are down because of the change in dosage of my evening medicine, Atkins, or a combination of both? I really want to believe it's Atkins but more time is needed to know.

Hi, Carole,

So glad the bad storms missed you!!!

We have had thunderstorms and some ferocious winds, but the only damage was frazzled nerves.

The lights flickered a few times. I'm running on battery power so any surges don't damage my computer.

I am simply amazed at your diminished appetite, especially with the tremendous miles you've been biking lately! Sure hope a similar event is in my future!

I made a decision today. I have tracked every mouthful of food since I started, and I think it has resulted in an unhealthy obsession with food.

So today I didn't write down what I ate, but was very careful to choose good foods with lots of veggies. I'm going to try it without logging everything for a week or so and see how I do.

If I find I need the discipline of logging everything, I will go back to that. But it feels so much more like a WOE instead of a diet this way.

I saw a new (to me) substitute for pasta on another board... and Liz mentioned it today in one of her posts.

I got a little julienne slicer today and plan to make zucchini "noodles", saute them, then top then with a tasty legal sauce. It will be a change from spaghetti squash. I bet they would be good just sauteed in butter and garlic with a bit of parmesan, too!
