Use higher carb veggies -- broccoli is a good one 1 cup of raw broccoli is 3.5 carbs (after the fiber is deducted) -- how about canned pumpkin? That's a great way to get extra carbs in and is a wonderful tasting treat - some people have it for breakfast, some as a snack or with dinner. Turnips, peeled and boiled like potatoes then mash and add a little cream and butter taste like a little stronger version of a mashed potato (I love them but I was raised on them). Green or wax beans are good also. Another favorite of mine is Spaghetti squash -- I have it with butter on top and a few cooked and mashed up grape tomatoes then I fry Italian sausage (small amount) and have that on top of everything else.

Here is the pumpkin desert recipe:

Mix the following together:

1/2 Cup Libby's Pure Pumpkin (NOT pie filling which has sugar)
1 Tablespoon butter
1 Tablespoon heavy whipping cream
1/4 Teaspoon pumpkin spice
1 Packet of Splenda

Heat in the microwave for 15 seconds. Stir. Heat another 15 seconds. Yummy. (Note - heating times may vary slightly depending on microwave)

Put the extra canned pumpkin in a bowl in the fridge for later use.


Take a tablespoon or two of cream, mix with a small amount of sweetner and some vanilla and make yourself some whipped cream to put on top. This is my favorite treat when I hit a mini goal.

Thanks so much,these look good. I guess the green beans have to wait as I am still on Induction but that pumpkin sure looks good.I will try it and I love turnips as well. The only thing is if Ihave a salad at lunch I have to becareful how many veg I have at supper right. I am still trying to get this all right this time..

Hilda - I ate green beans during induction -- as a matter of fact I had them night before last -- after you deduct the fiber out of them, according to FitDay, it's a little over 4 carbs for 1 cup of fresh (I use frozen) green beans - I cook them in a pan with a little water and butter or bacon grease. They are listed as an "other vegetable" but you need to try and get 1 serving a day from from this group, don't just eat lettuce you need some of the "good" veggies also. I call them "good" veggies because they are higher carbs so they must be better....right....LOL!!!!

One of my favorite veggie dishes are a couple pieces of yellow squash, a few (4 or 5) snow peas and broccoli (2 or 3 florets) steamed with butter -- everytime we go to Outback I order their mixed veggies (ask them to take the carrots out) because they taste so good and I know since I'm having a steak the "good" veggies will make it taste much better.

The tomatoes are starting to ripen in the garden. I've had grape tomatoes a couple times already but today was the first time there were actually enough that were ripe to bring them in. I also brought in one small tomato that came off the vine, it should have been outside a few more days but I put it in the window and it'll ripen there. We have scads of green tomatoes out there, I hope they don't all ripen at once, but I will can whatever we don't eat. I planted 6 various (Beefsteak, Early Girl, Big Boy) tomatoes, 1 grape tomato and 1 roma plant. Mom has been eating the leaf lettuce on her sandwiches at lunch, she loves that lettuce. Next year I'm going to plant 3 roma's (they can better since they don't have as many seeds), 1 or 2 Beefsteak and 1 grape tomato plant. I did get another cucumber plant since the others died, hopefully the scorching heat is over and this plant will be able to take hold. The onions are getting pretty big, and it shouldn't be long before we can start picking green beans. I love having a garden!

I laid down this afternoon for awhile but I'm still tired - I'm thinking it's keotsis because I've also lost my appetite the last couple days. I have cut down the Splenda now -- I have 1 cup of decaf in the morning with a packet of Splenda then I have the another cup after dinner - cream only ... no Splenda. I'm very proud of myself. I'd like to wean myself off the cream in my coffee also. When I lived in NY I had been drinking my coffee black for a couple years, then I moved to Iowa and the hubs drank his with creamer and sugar so I got back into it (wish I hadn't). Now I'm a strict decaf girl - I actually prefer it now to regular coffee. We stopped at World Market last night and the hubs got 3 sacks of bean coffee -- this time I made sure they were all decaf since that's all he's suppose to be drinking. We had enough punches on our coffee card to get a free sack so we ended up bringing home 4 sacks - that should last him awhile!!

Imagood1: Oh I wish my tomatoes were ripe. I have lots of them but they are still green. Even the little one cherry ones. Fried green tomato is starting to sound darn good..lol.
Well ate the another piece of my bacon cheese burger Quiche tonight with another small salad. Not really hungry but still in the negative as far as those little stix go.
I tried to whip some cream tonight for my dessert but no luck..I guess I just did not get the bowl and beaters cold enough. I will put them in the freezer before eating supper then they might be ready to work for me..I have terriable luck getting that stuff to whip right. I use the heavy whipping cream so you would think it would whip quickly.
I have walked so much these last two days that I have a blister in the center of my foot on the bottom..My friend goes home tomorrow so I guess it is back to my mp3 player and my 3 mile walk dvd for me. I will probably still goes for the evening walk as well. I do want to continue getting at least the 10000 steps in. however these past few days have been closer to 15000 and today it is over 18000..no wonder I have blisters
Well I am off to find a thread I seen earlier about suggested snacks for before bed to help with the high BG readings in the morning..

imagood1: I am going to start buying decalf coffee as well as soon as this container is gone. I won't tell hubby and hope he does not notice.lol. I only have 2 cups in the morning anyway, I just did a 2 mile walk and i already have almost 6000 steps in as i had so much energy this morning I watered all my plants outside then washed the car befor going for the walk..gotta love this energy...chat later

I'm so use to decaf when I go someplace and they try to put regular in front of me I can tell. Everyone always said how bad decaf tasted - when the hubs first came home from having his triple bypass we tried Folgers (because we drank regular Folgers) but it was a little strong for my taste. On a whim I bought a pound of the Great Value decaf at Walmart and that was the one we both liked so that's what we buy. Honestly, after all this time I truly like decaf better than I ever liked regular coffee - funny huh!

I mowed the lawn before lunch, took a walk after lunch and another after dinner. The first walk was with mom & the dog so there was little exercise there - but at least I was out. It's been in the 70's for the last few days - we turned the air off and opened the windows, it's nice to get some fresh air in the house and air it out. I forgot how loud the kids and dogs are in the neighborhood -- air conditioning makes the world disappear!

Not many new people the last few days ... usually around the middle and first of the month there are more than other times of the month.

I think I'll thaw out pork steak for dinner tomorrow - have them on the grill. We haven't had anything grilled for about a week so it's time again. We need to buy a new grill but I'm hoping we can baby this one until they go on sale at the end of the season.

It was nice to be able to sleep in this morning - more than I normally do. The hubs has been working on 3 different projects at work took the weekend to get ahead of them so the past couple nights I've been going down to help when mom goes to sleep. The way I help is I listen when he gets in a jam - once in awhile I get lucky and ask "THE" question that helps he figure something out...LOL!! Anyway, I haven't been to bed before 3:00 a.m. this weekend.

I had 2 eggs with 1oz red pepper & 1oz onion, 1oz colby/jack cheese and a Tbsp salsa for breakfast.

Lunch was a small bowl (1 cup) stew with 1 slice of deli deluxe cheese made into chips and 1oz pepperoni chips.

Dinner: Pork steak on the grill, spinach w/vinegar (canned) and a salad w/hidden valley ranch dressing on top.

Good food day!!! Why would you want to eat any way other than Atkins?

LOL Ok I bought a summer squash to have for supper with my steak, Well lets just say that did not go over. I really really did try to eat it. But it ended up in the garbage I just could not do it..back to my turnips or cauliflower. O f course now I am going to have to make a small salad to make up my veg or maybe just a couple of celery stick with salad dressing for dipping them that should be OK right.. 4 of my 10 carbs today are from veg..I can't have any more cheese as I made a nice pizza for lunch,,that is where the other veg came in.
But I did have a Tbsp of horsradish with my steak..Read about he wooshie burger and going to try that this week as well..Tomorrow is the big weigh in day and my first week of induction gone...yes

Well off to have a crystal light popsicle..they are OK right I used all my cheese allotment up for the day and no LF/SF jello made up..I just feel I need a wee bit of sweetness and that should do it..I made them weak with the crystal light as well...

Personally Hilda -- I don't drink crystal light -- too many chemicals and and they are made with aspartame .... even watered down I just wouldn't put it in my body. That's your decision but you know we've been warned about aspartame slowing or stalling weight loss. Being diabetic and on the meds we're on I don't add anything chemically based and I don't eat/drink anything that could cause a stall....I don't loose enough or quickly enough to begin with...why mess with it.

Ingredients:
Citric Acid, Potassium and Sodium citrate, aspartame, magnesium oxide, natural flavor, lemon juice solids, acesulfame potassium, artifical color, yellow 5 Lake, and BHA.

Hilda -- how did you cook your yellow squash? I steam mine, put it in the microwave or grill it with olive oil on it.

Why don't you eat green beans? They are on the "other" veggie list (listed as string beans).....I eat them all the time, along with broccoli, cauliflower, turnips and canned spinach.....those are really my "go to" veggies. I add other veggies from time to time but those are the ones I eat the most.
