That pound was probably salt that was in the chili making you retain water. I know all about fluid retention.... my scales go up and down 5 or more pounds if I start retaining more than usual.

Your stats are just amazing to watch. How is your mom?

I use to say if I walked by a restaurant I'd gain 3 pounds from the salt inside the building....since menopause I don't have the same problem, but I do still retain water, probably watching what I eat is what helps more than anything.

Mom is doing much better, thank you for asking. Her system is slowing down and she can't do everything she did before and that bothers her, but the hardest thing to get use to is she doesn't fight infection like she did before. She is a 5 year cancer survivor (bladder & kidney and uteran) so we are lucky to have her - they gave her a 30% chance of survival for 2 years, so she's quite a miracle. Last year she had sepsis that really took her down for a few months and was the reason she came to live with us.

Thank you for reading my musings...there are days I wonder why I write things, but it is good therapy to get everything out in black and white. It also makes you more accountable for your actions, and I need that!

Glad your Mom is better, Carole.

And I loved the valentine.

DH and I didn't do cards or anything special, but we did say Happy Valentine's Day to each other.

I made homemade chicken soup with legal veggies tonight. It was wonderful and I have 5 two-cup packs of broth in the freezer, so feel rich.

It's been too long since I've been back here! I'm trying to get everything caught up again - I have no idea why I haven't been here, but sufice it to say that I have been lax!

I have found the wonders of flax cookies and I love them. Of course I had to make some changes to the recipe for my taste but they are wonderful and I'm finally regular for the first time in about a month! It is a total of 3 for 2 cookies (1 batch) and sometimes I can't eat 2 so I count 1-1/2 for 1 cookie. They are yummie

Here's the regular recipe and my changes in red beside them.

Flax Cookie
2 T flax meal
1 packet Spenda (1 put in 2 and count an extra carb)
1/8 t cinnamon (1 put in 1T cinnamon, a "shake" of ginger & a pinch of gorund cloves)
1 T butter
2 T water
mix dry ingredients, add butter and microwave 30 secs. Add water, stir and place on a peice of parchment paper. Spread thin with the back of a spoon. (Makes 2 cookies)


Microwave on high for 2 1/2 to 4 min. till crisp. Let cool.
Don't forget to count the carbs. 1 for flax and 2 for Splenda - total 3.


These cookies are my afternoon delight now! I make 2 batches at a time so I don't have to make them everyday - for Monday, Wednesday and Friday I make cookies. I even have my mother eating them - she didn't really care for them until I upped the Splenda and added the additional spices - they were too bland for us.

Because of my being lax I haven't lost much weight the last couple weeks, but I am in a smaler size of jeans (still elastic waistband mind you) but the ones I was wearing everyday that were tight and left marks on my waist are now loose and the pair I'm wearing today are a size smaller and they fit perfectly. Because of this I'm not as unhappy as I might normally be, my body is changing even if the scale isn't showing it.

I have a pork roast in the crock pot for dinner tonight. Think I'll put some cabbage in with it and cook some broccoli - add a salad and call in dinner! Sounds yummie!

Last night we had fried chicken (no flour on mine thank you) and I made fake macaroni and cheese and we had green beans. That was a wonderful but I felt like I ate too much!!! It's funny how mom & DH can eat mashed potatoes and gravy and I pass it back and forth between them but i don't miss it. A couple weeks ago when I was having a bad day I took a taste of the gravy (my favorite white flour gravy growing up) and it didn't even taste good so I spit it out. I guess there are some things that I don't want anymore - and they seem to be the bad things I ate before!

I found a recipe for flax bread that I think I'm going to try since I'm past the nut rung = I'm on berries this week. It would be nice to have something other than the the revolution rolls, which I haven't made since about week 2 because they were "ok" I really didn't like them. I think I ate them the first week because I wanted bread but now I don't really care if I do or not on a daily basis. Occassionally it would be nice to have a slice of bread though.

Hi, Carole,

Those flax cookies are wonderful... and they have saved a lot of evenings for me.

Also, I've tried them with seasoning salt, coarse pepper and sesame seeds and they make a wonderful cracker, too.

Let me know how the flax bread turns out.

And I am really proud of your progress. Wish you could rub some of it off on me!

I didn't think about making a cracker out of them -- I'll have to try that because it really sounds yummie.

One of these days you're going to blow past me and I'll just stand here waving at you!! I'm glad to be losing but it seems at this rate I'll be here forever...but then I think, maybe that's the reason I am only losing 1 pound every week....I am anxious to get to 190 -- where I am now is still too close to 200 to make me feel real good. By the way, I've been meaning to tell you the transformation from beginning to now in your pictures is amazing -- you look so much younger and there is a big difference in your mid section! Great work!!

Today I wore a sweatshirt I received for Christmas that was so tight I just hung it in the back of the closet. That made me feel real good - now I have smaller jeans and a brand new sweatshirt that I can wear out of my closet.

I need to change up my exercises a little this month -- I'm afraid I'm getting bored each morning when I do them...maybe I'll try a video once a week.

Take care!! I love reading your posts all over the board. It seems we gravitate to the same type of people to post on because I usually see you've already posted when I get there!! You have a lot of good advise especially for the newbie's.

I made a flax bun tonight (posted this on another thread also) -- it was ok, but I think it should be 2 servings instead of one. Also it needed some sea salt & pepper - I put garlic and onion powders in but it still needed sea salt & pepper, it was just too bland! Hopefully someday I'll find a good substitute for bread/rolls/buns. The revolution rolls are something I just can't choke down anymore and the flax bun wasn't that great so maybe with a little more tweaking they will be ok.

I took a walk with mom & Sadie this afternoon. It's starting to warm up a little more this week so we took advantage of it. Sadie is getting better on her leash, she's still all over the place, and she gets so excited when we ask if she wants to go. She hates riding in the car, well, she wants to go but she just doesn't want to "go" in the car....she's so funny!

I just finished entering my dinner into FitDay and my daily total is almost perfect as to what Dr. Atkins wanted us to stick to. Since I've gone onto OWL there have been a few days that I've been high but I really started watching my totals again.

Tomorrow is 2 months since I've been on this WOE -- I started January 5. When I first started I thought I'd be further along with my losing weight by this time...but I have learned that my body is not the same as some of the people's weight loss success stories I read about when I started. I'm not upset with my weight loss, on the contrary I'm very happy with 21 pounds. I know I have alot more weight loss in me and it might be a slow journey but each pounds I loose I figure is a day longer to my life. That is a real motivator to keep going...1 pound for 1 day longer!

This is my second month hosting the water challenge -- we have a lot of new faces this month and I'm trying to keep everyone motivated to keep going and drinking each day.

Well, I can't think of a thing to say so I'll stop for now.

Hey Sunny -- I made flax crackers yesterday. I got a little too much garlic powder in them so that's what I tasted most, but all in all they were good. I got 5 good size crackers out of the batch. Next time I think I'll roast the sesame seeds before I put them in the crackers for a more robust sesame taste.

I tried the crackers with some ground pork roast (pork, mayo & a pickle ground up - like ham salad) that was yummie!! I also put some french onion dip on them and loved that taste too. I'm going to back off some of the spices and see if I can get something that resembles saltine crackers (not in color but more in flavor) so when I make soup I can have crackers to eat with it. That's something I really miss!

One of the local grocery stores had bacon on sale Thursday only (along with chicken breast and a few other things I needed) so I picked up another pound of bacon while I was there -- the sale price was $1.59 and then the lady doing the demo of the product handed me a .50 coupon so the bacon cost $1.09. I tell you what, that bacon tasted so good this morning ... maybe a little better than normal because the price was so low! There was 1 coupon per customer but that was ok because it was something unexpected! I also got a pound of large peel and eat shrimp for an extra special treat today or tomorrow -- can't wait.

Hi Carole, I'm back after a very hectic week. Thanks for the flax recipes. The flax muffin recipe that I had tasted somewhat like wood. LOL. Your cookie is better.

Carole, where are you posting the recipes for the flax cookies and crackers? They sound good and I need something different to try. I make a MIM, muffin-in-a-minute, that I like but I'd like to try the other things too.

It sounds like you have a new puppy? It's been awhile since we've had one around. Our lab was born in 04 so it's been awhile. We got our American Eskimo in 06 but she was almost a year old by then. Puppies are so much fun, except for the housebreaking part.

I think about you every time I take a sip of water and wish I was still in the challenge but 48 ozs. is all I dare drink a day. At least I'm sleeping better now because I'm not getting up 3 times during the night to go to the bathroom. But one of these days, I'm going to join again.
