That's a very insightful comment, Joy. And a very truthful one at that. I've reviewed countless menues where folks are using all 3 sweetener carbs, all 4 cheese carbs, the max amount of cream carbs, but restrict their vegetables to 2 cups of lettuce. Or they eat 1 cup of lettuce and get nervous when they're advised to drop their Atkins bars and eat more vegetables!

Veggies are good carbs because they are generally nutrient packed with vitamins, minerals and fiber. I don't mind "blowing" 5 carbs on 1/2 cup of pumpkin or on a cup of tomatoes because I know those veggies have higher nutritional value (and therefore more healthful for my body) than 3 packets of Splenda and 2 tablespoons of heavy cream.
