Here is one I had that I liked!! I haen't made up a name for it....hmmm

Elsie's Breakfast Wrap

1-2 scrambled eggs ( I use 2 as I am trying to up my calories)
1 oz cheese, shredded
1 T sour cream
1 T salsa (make sure it is sugar free or homemade)
Romaine lettuce leaf (or 2)(or 1 cup torn lettuce of choice)(Romaine seemed to tear less)

Scramble eggs. Spoon onto lettuce leaf. Place cheese onto so it can start melting. Add sour cream and salsa. Wrap leaf(s) around it and enjoy.

A good way to get some of your veggies in. You could also add some peppers or other veggies of your choice.
