Tricky, very tricky. Those of us who cook love to see the pleasure on others' faces when they eat our creations, don't we? As for your mum, is she doing what she has always done, turning up with fattening surprises? (that is what my own mother called cakes and sweets - she was always on a diet, but delighted in her fattening surprises).
I had a bit of that trouble when I first started, but now my family and friends have accepted that I will not be eating their sugary offerings. It takes a little while for people to get the message.
Maybe as your mum is an expert baker, try to get her on-side with you, for instance 'hey mum, these are the ingredients I can cook with, what do you think I can make?' or 'mum, these are oopsie rolls, incredible what you can make with egg and cream cheese, isn't it?'
Who knows she may come up with some fantastic low-carb creation we can all enjoy!
