Life is too short to eat foods you don't like. You don't have to love all the food but you at least have to like it and not choke on it. You have identified a few of the veggies that you like. That's enough to get you started. There is nothing, absolutely nothing wrong with eating 2 cups of peppers every day. There is enough food on the induction list to find something you can eat. And if that means only eating a few things everyday for 2 weeks, and you're happy with that, then go for it.
