Corinne T. Netzer "The Complete Book of Food Counts" is the book I use. In almost every case it is right on the mark with Atkins carb counter. It gives you calorie, fat, carb, fiber, protein, etc.

Easier yet, I just got a digital food scale that has a code you punch in that gives you all that in a second!

When in doubt about veggies, measure it raw and count that. Depends on how much you cook it as to how much it cooks down. I don't cook my veggies much so they are still crispy and cook down very little.
