About the lactose.......

I remember reading somewhere that the authors of the GO Diet said lactose doesn't affect blood sugar the same way as glucose would or something to that effect.

Well, they base that on how lactose is digested by the body. Lactose is a glucose molecule stuck onto a galactose molecule. An enzyme in your stomach, breaks the bond between them. So you get a glucose and a galactose molecule. I think the GO Diet people say that since the lactose splits into a glucose and galactose, then you may only count only the glucose portion or roughly half the listed sugars in dairy.

BUT, they don't mention that galactose is also converted to glucose in the liver before it is released into the bloodstream.
