The dairy you introduce in OWL is fresh dairy products, such as milk and milk products (like yogurt, kefir, etc.) and the "Fresh" cheeses. "Fresh cheeses are cheeses that haven't been aged, such as cottage cheese, ricotta, farmer's cheese, etc. These fresh cheeses and milk products have more carbs than the "Induction dairy" (cream, butter, and aged cheeses.)

So if it's an "Induction dairy" that you are introducing, stick to the "Induction" levels. If it's an OWL dairy that you are introducing, stick to the 5 net carb limit.
