I would suggest you treat your trip like you would camping or going on a picnic, you wouldn't leave the house without a cooler or picnic basket with plates, plastic ware, napkins, etc.
Just about everything on the Induction list would be ideas to take with you, such as: Water, boiled eggs (make egg salad or sliced on salads or eat for breakfast), premade bacon (slices and chopped for salad), string cheese, cleaned/chopped/sliced veggies (cucumbers, celery, green/red lettuce (leafs are great for making sandwich with the meats, cheeses etc. by just rolling it up with the stuff inside it)), olives, precooked ground beef, chicken, tuna, etc. You just have to be creative on how you'll pack it in your cooler. I've made salads in large ziploc bags ahead of time so all I have to do is dig out my fork and that's my "plate" when I add my dressing. It saved time and clean up, too. There's a recipe for "oopsie rolls" you can do a quick search for here that is legal for Induction (and can be made with mayo instead of cream cheese...that will make sense when you read the recipe) and can take with you to make "sandwiches". Pork rinds are a great little snack, just make sure you're limiting those because of the salt content.
