I didn't get the cheese connection either on my first and second time on Atkins and I lost at a very slow rate. I ate a lot of cheese. I'm sure over 3 oz a day, but I wouldn't say a whole lot over that amount.
This time I am eating a lot less cheese, some days I don't have it at all. I lost 10 pounds in the 2-week induction phase. (I'm kinda/sorta stalled right now, I'm figuring my impending TOM is causing it)
Like you already figured out, I would cut back the cheese and eliminate the aspartame and see if that does it.
