Re: Hello | | Hey, unclesalty I totally understand the challenges involved with incorporating vegetables. I struggled with it for a while; not a big salad eater. However, I found a few very tasty solutions whereby the vegetable is not the focus. 1. Sliced Cucumbers drenched in Sugar/Carb Free Greek Salad dressing 2. Celery stalk with cream cheese 3. Jicama Cinnamon Fries (Sliced Jicama fried in Olive oil and sprinkled with cinnamon and Splenda) I basically view veggies as dipping foods. Hope this helps
