When I started Atkins, I invested in LOTS of spices! I make my own fajita/taco seasoning now.

I use:
chili powder (a good amount)
cumin (1/2 as much as the chili powder)
cayenne (just a dash!)
chipotle (just a dash!)
cilantro (either fresh or dried)
sea salt (to taste)
black pepper (to taste)
garlic powder and onion powder (Lately, I actually just use fresh garlic and onion, throw them in the food processor to chop then add them to the meat as it's cooking!)

You will have to experiment to get the right balance. For chicken, I use more cumin, for beef, I use more cayenne. I never measure anything, so you'll have to estimate.

While it doesn't have the same familiar taste as pre-packaged stuff, it's much cheaper and much healthier for you! I like my own mix better, and everyone who has tried it absolutely prefers it to store-bought package seasoning.
