Hey, I just checked out Linda's recipe and was wondering... is it necessary to use the molasses? I've never used it before, and am not crazy about the idea.

Also, I learned something from reading the recipe - I was wondering whether a chayote needed to be peeled or not. I see that she does peel it for her recipe.

chayote.... i use a veggie peeler on mine. the reason being, most times the outside has a little bruising or marks. IF i find a chayote in really good shape, i have eaten the peel just fine.

i have to say that the best way i like chayote is fried in butter, sprinkled with cinnamon and splenda. it tastes almost like spiced apples to me fixed that way.
eating them raw is a good way to get a 'crunch' if you need that but i fine they are pretty much bland unless you add something like the p'nutbutter, cinnamon etc.

Total Gross Veggie Carbs: 28
Total Net Veggie Carbs 16.5 (darn it, missed it by a skosh - one more cherry tomato would have done it)

Great information - thank you! I will try it with the cinnamon and splenda. And if I can find a chayote in good shape, I'm eating the peel.

Ok I need to check in... I have been having some family issues and apologize for not checking in sooner! I have been keeping track of my veggies though so here it goes...

Monday -
1/2 cup pumpkin - 10g/4g/6 net carbs
1 cup mushrooms - 2g/1g/1 net carb
1 cup red pepper - 9g/3g/6 net carbs
1/2 cup onion - 7.5g/1.5g/6 net carbs
Total 19 net carbs

Tuesday -
1 cup red pepper - 9g/3g/6 net carbs
1/2 cup tomato - 3.5g/1g/2.5 net carbs
1/2 cup green onion - 3.7g/1.3g/2.4 net carbs
1 cup eggplant - 5g/3g/2 net carbs
1 cup jicama - 11.5g/6.5g/5 net carbs
Total - 18 net carbs

Incidentally, I had never had eggplant before. I always thought they looked a little gross and didnt know how to prepare it but I made eggplant parmesan and it was amazing! Everyone loved it I am going to try to find chayote next because that sounds yummy!

I've never used molasses... I think I may have peeled a chayote once and decided it was too much effort. I do the same as Jimmie - pan frying in butter, top with splenda and cinnamon..

I simply adore this challenge, but there is just one thing I hate about it every time I do it: It's that everyone talks about so many wonderful sounding veggies that I can't get over here in Italy! WAAAAAAA

Chayote sounds fantastic! I'm green with envy!

Ok... enough grumbling !

My November 11th veggies: Eggplant, asparagus, onion, mushrooms, artichoke heart (all in a veggie buffet at a restaurant) for lunch. At dinner, I had Swiss chard. Total: 26 net carbs.... again! Gotta love those veggies!
