I am a spicy food sissy.

I don't eat hot sauce.
I don't eat very hot salsa.
I eat only the mildest wings I can find.

However, these things are the most tasty fabulous little gems to make. Getting the membrane and seeds out are the key. If you do that, they won't be any hotter than a cooked green bell pepper (IMO). I can eat these things all the time!

ErinonAtkins...they should be made with a non meltable or slow melting cheese. Fontaine is good, but sorta "spensive. Walmart has a frying cheese that you could use and there is that what mexican cheese (the name eludes me) that supposedly works well. I think cheddar would just melt all over the place. But it would be delish.

I thinK MOG stuffs her's with shrimp...now that would be tasty too!

I wish I had seen this recipe before I made some tonight. I filled them with cream cheese and dragged it in egg, and then covered it in parmessan. The parmessan cheese really didn't stick to the pepper. I just cook it in oil on the stove, maybe the parmessan would stick better if I had a deep fryer.

LOL I'll be sure not too. Instead of mellowing out this heat seems to be intensifying on my hands..first just my pointer finger as that's the finger I used to scrap out the white membrane and seeds with. But it's now heated up my thumb and palm on the other hand.. *laughing*

If you cut them under running water, you will be fine. Also the longer you cook them, the more mild they are.

I just made these the other night but tweaked it a little. I mixed cream cheese and shredded cheddar together- I also use a hot pepper(I can't rememeber the name but it was labeled as medium hot) and I would also agree to cook the bacon a little or get precooked because it does come out nice and crispy that way- otherwise the peppers may cook faster than the bacon. And toothpicks to hold them together. Oh yeah- I also took my contacts out after making them
I just forgot- and I've never felt pain like that so yes- be very careful

I made a batch of these yesterday but sliced them lengthwise filled with creamcheese and then topped with ham pieces. Hubby grilled them on the outdoor grill. So so good!
