Just tried these myself tonight, what a great recipe!!!

I felt like I was cheating almost, I think it really satisfied my "appetite" for something breaded.

I would make these using Parmesan cheese instead of the pork rinds, but if you deep fry, how do you figure in the calories/fat from the cooking oil?
You can't actually empty the fryer and measure the remaining oil. Is there an approximate count out there somewhere you can add to a food that you deep fry?

I don't use a deep fryer - I measure my oil before I put it in the skillet then I fry my chicken fingers (I use and egg and parmesean cheese not pork rinds) it's much easier to figure how much is left over that way. I have used a combination of olive oil and butter to fry them in and also a combination of olive oil and coconut oil for a different flavor.

Thanks Carole,
I think that is really the only way to know for sure. That's what I do when I fry up Jicama. Just thought there may be some "magic" number to use when we fry something without measuring the remainder.
