Default stuffed Jalapeno's

My best friend made these for one of our lunchon's, not knowing they were low carb.

15 good size fresh jalapeno's
1 pkg cream cheese
2 tbl's fresh chives
15 slices of bacon

Cut tops off of jalapeno's and clean out seed's(be sure to get out all seeds or it will be hot). Mix cream cheese and chives in bowl. I put my cream cheese in a sandwich bag and cut off one of the corners to use as a pastry bag to fill the peppers. Once peppers are filled wrap peppers with a slice of bacon and secure with toothpicks. (note: if u happen to not have any toothpicks, poke the bacon with a fork and it will not curl). Be sure to have ends of bacon on the bottom. Lay peppers on cookie sheet and bake at 350 for about 30 to 45 minutes. It just depends on how well done u like your bacon. Easy to fix and are really wonderful.

1 pepper 1 carb
2 tbl cream cheese 1 carb
chives trace of carb
[u]bacon 0 carbs
Total Carbs 2

Still learning so I really hope my carb counts are right:

THis sounds delicious. I haven't started looking at the recipes on this site yet as I have not got bored with what I'm eating. But this will be high on my list to try since I love HOT and SPICY stuff!

Yum! This does sound delicious pfr, and I'll try making these for sure. I too like my food to pop with spices or hotness. You can replace that cream cheese with either pepper jack, or monteray jack cheese and save a few carbs. I'm always looking for interesting dishes to serve to company that I can have also. This one fit's right in so thanks a bunch for posting it. Misty

This is the same recipe (pretty much) that Emeril was doing on tailgating contest winners!
I think I just may have to try it myself.

They did note to soak your wooden picks first so they will not burn (they were doing these on the grill.

I have been eating jalepeno poppers almost twice a week. They are great. I usually cut my jalepno's in half longways and then fill with cream cheese and then just lay 1/2 a piece of bacon over each half. I bake for about 30-40 minutes and eat them with a fork.

They are great!

I just tried these. They were very good. I must have cleaned the peppers too good cause they were not at all hot.
I made a few of them with cheddar, and although tasty, the cheese ran all out of the pepper.

Ok these were SOOOOOOOO Good!!! Thanks for the post. The only problem is that I got 10 peppers and ate 7 of them when I made this- ensive. I obviously will need to buy & make only the amount I want to allow myself to have so that I do not have the option to eat them all at once.

I've made jalapeno poppers with cream cheese and sausage (cooked) then mixed together. I was in a hurry and used canned jalepenos, already sliced in half.

Drain the can, put cream cheese mixture on each jalapeno half (can also add garlic powder to cream cheese, and chives) ... and put into fridge.

These are cold, can be made ahead, and make great appetizers (be aware that the canned versions vary in 'heat'. I've had some that I can't eat!

I've made your poppers for years..LOL..before the Atkins Revolution!

But the cream cheese and sausage sound delish. I'll be doing those.

Over the weekend I used fresh peppers, stuffed with cheddar, wrapped with bacon and they were YUMMY. Everyone thought so.

Every year I grow jalapenos, and until now didn't really have good recipe for fresh ones.
