Default First day on Atkins

I am currently on my first day of the 14 day induction, I have been reading the book (Haven't finished it just yet), I got rid of all my 'Bad' food and now have the place stocked with 'Good' food.

My one main concern with the Atkins diet is how to make a meal out of the food we can eat. For breakfast this morning I had a great cheesey sausage omelette, and for this evening I have a nice steak that I can tuck into. But lunch is a different story, I've been eating sandwiches for lunch for years and years, I use to mix up a batch of tuna mayonaise and sweetcorn then stuff it into a nice wrap or roll, obviously this is a big no no now that I'm on the induction but can anyone else give me some idea?? I could do with something that is simple to make and I can eat it on the go, not something that I have to sit down to eat.

I know that down the line I will be able to eat a more varied diet I just need some ideas.

Sounds like it's a good first day for you - you're reading the book and you made a yummy brekkie :yes

Lunches - usually I favour spinach salads with selection of cucumber, red onions, cherry toms, celery, capsicum, mushroom (any of the salad veggies on the Acceptable food list), topped with a low-carb dressing, and I'll usually add some roast chicken, peeled prawns, egg, avocado etc usually comes to no more than 4-5g carbs for lunch (if I don't have the avocado)
I find this sort of lunch is great for me at work, coz there's a pick-your-salad fruit & veg shop near work. If not, I'd pack it in the morning before I head off.

Alot of people (me included) have a harder time in the beginning figuring out how to form a meal. Though lunch is your problem now, we get a lot of posts about people getting sick of traditional breakfasts after a couple of week. I just wanted to warn you that may happen to you shortly.
As for lunch, I've recently been making myself 'sandwiches' using a large romain leaf, then I use a spread (I'm on legumes so I use hummus, but you can use mayo, mustard, etc.) then I add some cheese, another veg (like cucumber) and meat. I've used turkey, ham, roast beef. The roast beef was really good with cream cheese, jicama, mayo and mustard. It can be hard to be creative when it's very new to you. Bon appetit!

I agree with tickle -- Salads are a definite mainstay for lunches.

Some other ideas:

Tuna salad, without the sweetcorn. One can of tuna, a couple tbsp. of mayonnaise, maybe some pickle. Sometimes I eat my tuna salad with celery sticks instead of a fork.

Another thing I ate all the time on Induction was a Chicken BLT bowl. This takes a little bit more prep than the tuna, but it's well worth it. Grill up a chicken breast then cut into cubes. Mix in a bowl with shredded lettuce, chopped tomatoes, cooked & crumbled bacon, and mayonnaise. YUM! You could make this the night before or the morning of and then take it with you. All you need is tupperware and a fork, so it should be easy to eat on the go.

I like to keep a big batch of both cucumber salad (cucumbers & vinegar), and coleslaw (red & green cabbage with mayo & some vinegar) in my fridge. I'd often take a side of one of these and then some leftover meat from the night before. This you would probably have to sit down to eat, so maybe this wouldn't work.

Effie, I made a cucumber salad trying to copy what I used to get at a favorite restaurant. The dressing I made is rice wine vinegar, sesame oil and a little bit of Splenda. I think it came very close. A tiny bit sweet and refreshing.
