A salad made of chicory (Belgian endive), arugula sprouts and a few strips of red pepper, topped with some grilled chicken and a little homemade olive oil dressing

I made a cheese "taco" in the shape of a bowl and plan on having a taco salad in it with lettuce , cukes and a meat mixture. I was careful making my meat mixture to be sure there is nothing with carbs in it.

Ranch dressing on top and voila "taco salad"

Im not too sure yet but seem to be in the mood for fish so if thats the case come dinner time it will be steamed cod loaded with some yummy spices and perhaps roasted brussel sprouts or sauteed mushrooms.

2 country pork ribs made in the crockpot (fall off the bone good and tender) with 1 cup saurkraut, .5 cup zucchini, .5 cup squash (made with just the olive oil spray and some garlic powder)

I'm making a lasagne, using thinly sliced briefly-nuked zucchini as the 'noodles'. It would be easy enough to make it Induction friendly by cutting out the cottage cheese and sprinkling some feta in there instead.
