I hardly eat pepperoni anymore, but when I did I only nuked the amount for 1 serving size and ate that. Remember: part of maintaining a healthy weight is portion control. Many of us are over-eaters and have no clue what a "normal" portion is. By learning these proper portions now, we will not only re-learn our natural hunger/satisfied ques, but also we will learn how to eat normally. As 2Big likes to say this WOE is like building a house: you need to have a good foundation.
Furthermore, the nutritional info on the package is only accurate for the listed serving size. If the product contains sugar (which most cured meats do), the manufacturer might be able to get away with listing 0.5 grams of sugar as "0". So two or three of those servings will contain countable carbs and they add up.
