| My favorite breakfast.... leftover medium rare ribeye heated up in a pan and then lightly smothered with horseradish. Piece of pork sausage Any leftovers- soup, tunafish, frittata

| I like a mock danish now and then. I make it the night before and then eat it cold the next day. How about some tuna or chicken salad (homemade) or a flax bun. Eating too much flax can stall some people but you can mix things up a bit by having that one day, a mock danish another day, eggs the next....have you looked in the recipes forum? There may be some breakfast ideas there.

| I eat leftovers from dinner or lunch the day before. Sometimes, I'll boil eggs or have them scrambled. But it's usually leftovers.

| I eat an array of things for breakfast, rarely what is considered traditional "breakfast food". Like Megs, leftovers are great! Sometimes I'll make a nice crustless quiche (recipe is in DANDR in the back) and cut it in portions so I can just grab a slice and nuke it for a few seconds - makes an easy breakfast to bring to work! Ham and cheese roll ups are another quick and easy breakfast. Leftover steak or a pork chop with some sauteed mushrooms are also good for breakfast. A slice of tomato with it when they're in season. Use your imagination, as they say "think outside the box" anything can be breakfast food!

| Of course there's a million other ways to fix eggs; Benedict, Souffle, Coddled, omelettes, crepes... just watch what mixed in. Some alternative breakfast ideas I like: Lox without the bagel, Surf-n-turf, last night leftovers, and Oysters on the half shell. mmmm! Susan |

| pancakes made with eggs and cream cheese. recipe is here: http://users3.ev1.net/~fontlady/recipes.html salmon or tuna patties: i made this recipe up by myself but i have to warn you i'm a terrible cook. still these taste good to me. if you cook them well they have a nice crunchy texture. whip or whisk 3 eggs in a bowl. add a couple of teaspoons of parmesean cheese, pepper, salt, any other seasoning you like, some shredded cheese, and a drained can of tuna or salmon. mix it all together in a big lump. cook like pancakes until firm and crunchy. (cosco has these wonderful cans of salmon that have no bones in them. really tasty.) breakfast muffins: (contributed by hilo) eggs, cream, any meat, cheese, veggies if you like, mix them all together and cook in greased muffin pan. (hilo said she prefers sausage the best.) and there are some excellent recipes here on this website as well. check out the mock muffins and the mock oatmeal made with jicama. |
