I just tried these for the first time. I dont remember these from a few yrs ago when i tried atkins.
I just wanna say that whoever came up with this is brilliant!!! close enough to bread for me!!! These solve so many probs like having chicken or tuna salad but nothing to put it on, I love making egg sausage sandwhiches, this is perfect but double the egg, lol


They are great too! really airy but nice I do like it with the onion powder.

You can thank Fran Cullough who used to be Dr. Atkin's nutritionist. She and another Atkins' worker developed the recipe for the 1972 book.

The recipe originally called for cottage cheese. Someone else replaced it with cream cheese. I altered that recipe by adding onion/garlic powder and nixing the sweetener (it didn't need it imo).

It is a great recipe and now you can eat sandwiches or hamburgers with buns. If you play with the shape, you can even make hotdog buns or club rolls with it. Likewise, if you spread the batter into three or 4 8-inch cake pans you can have Induction friendly tortillas/wraps.
